This recipe for, Shrimp Stuffed Peppers: Meso's Seafood Side-dish or Entree are amazingly good. One key is technique and blanching the peppers for about 5 minutes before stuffing peppers makes then tender and sweet in such a way that could not happen if not done. Recipe below: Meso’s Shrimp Stuffed Bell Peppers 4 Whole Bell Peppers (cut in half total 8 halves) 1 Cup Shrimp (chopped) 1 Cup Rice Cooked ½ Cup Cheese (any kind cubed) 2 tbsp. Onions ¼ Cup Baked Sweet Potato (cubed) 1/2 Cup Picante/Salsa 2 tbsp. Poblano Peppers Salt (to taste) ½ tsp. Garlic Powder ½ tsp. Oregano Water for adding to bottom of baking dish Optional: Dry Jerk Seasoning. The shrimp and be substituted by any seafood or meat for that matter of your choice. Pre-heat oven to 350 degrees. Wash bell peppers and cut in half taking out all seeds and spine. Boil water and blanch peppers for about 5 minutes. Remove from water, drain. Mix other ingredients together and stuff into peppers really full. Pour water about ½ inch of water into the bottom of pan, cover with foil and bake for 45 minutes. Enjoy!
